Bachelorette Party in Vegas

A few weekends ago a few of my bridesmaids and girlsfriends got together for my Bachelorette Weekend in Las Vegas, NV.  One of the perks about 8-girls, all dolled up is getting in for FREE everywhere!  We had a great time having girl time and I enjoyed sharing some of my wedding plans with some of my favorite girls.  Here are a few pics... what happens in Vegas, stays in Vegas ;)

What to do with left over pasta?

Have you ever found yourself, after boiling some pasta, that you've boiled too much? That happened to Scott and me the other night. We decided to refrigerate it and save it for another day. That day was today. After a really excellent jog/hike we wanted a light and healthy dinner. Here's what we came up with:

  • Left over pasta (we had Brilla multi grain +omega penne)
  • Bag of broccoli/cauliflower mix
  • Frozen peas
  • Light olive oil
  • Smart Balance
  • Garlic salt
  • Chili flakes
  • Black pepper
  • Parmesan
In a large non-stick skillet warm olive oil. Add broccoli/cauliflower mix and warm until broccoli starts to blush then add in peas. With a wooden spoon scoop up some Smart Balance spread and melt over veggies. Add garlic salt, chili flakes and pepper to taste. Add pasta and stir mixture together. You may find that the oil and butter get absorbed - add some water and a little more oil and butter. Coat mixture with Parmesan, stir and continue to heat. You're done when the peas are done.
For oil and butter it's add as you go. If it looks dry, I add more oil. If you want a creamier taste add more Parmesan. If you want it spicier add more chili flakes. If you want more... eat more!

Tex-Mex Breakfast Tacos

This is an excellent recipe I found in the latest Fitness Magazine. It's vegetarian and oh-so-delicious!

  • Firm tofu
  • Olive Oil Spray
  • Turmeric
  • Garlic Salt
  • Pepper
  • Optional Chili Flakes (if you want it spicier)
  • Optional Diced Tomatoes (for extra fresh flavor)
  • Optional Diced Avocado (everything taste better with a little avocado!)
  • Fresh Salsa
  • Cilantro
  • Refried Beans
  • Cotija Cheese
  • 6 in diameter soft corn tortillas
Measure amount of tofu based on number of people you plan on serving (1 block of tofu serves 5). Spray Olive Oil onto a non-stick skillet and crumble tufo. Sprinkle in turmeric, garlic salt, pepper and chili flakes to flavor and saute' for 4 minutes. Add in fresh salsa. Warm up refried beans in a separate pan or microwave. Warm tortillas and start layering: beans, tofu mix, cilantro, tomatoes, avocado and Cotija cheese. Fold and ENJOY!

Using tofu is a great alternative to eggs for protein and when you add turmeric... it looks like scrambled eggs!

If you're cooking for two, this is a great 1-pan prep meal (12" or larger non-stick skillet) and divide pan into 3-sections. One section for tofu mix, another section to warm beans and the last section to warm tortillas. Makes for an easy clean-up!
